Battlefield 3 is heading out to the world on the 28th of October. Andy McNab is involved with it. Wow.
People at E3 itself will be able to try and battle their way through Paris from their Stock Exchange to wherever mysterious people-hating terrorists are hiding with a dirty bomb, along with some fighting in Tehran.

Mass Effect 3 will be out to play on the 9th of March 2012, according to BioWare. Continuing the existing storyline, you (Commander Shepard) lead a counter assault to take back the Earth.
And for those with a Kinect, you will be able to enjoy voice commands in combat and vocal choosing of speech branches in conversation, along with other motion control delights.

EA Sports have announced a new online component to FIFA 12, the “EA Sports Football Club”.
People playing FIFA 12 will have their performance measured through the service and can be compared against others. There’s also mention in the PR about things like virtual leagues, and the best thing is that it’s all completely free to use at easportsfootball.com

Insomniac Games have announced a departure from their usual franchises at E3. As well as Ratchet & Clank and Resistance, they’re also creating Overstrike, a 4 person co-operative adventure where members of Overstrike 9 must stop terrorists from killing everyone.
Cue high-tech gadgetry and killing things.
